GRAPE: 100% Tinta de Toro
APPELLATION: Toro DO
VINIFICATION:Traditional viticulture. Vineyards planted in low density, 100% bushvines. Manual harvest in boxes.
Fermentation with native yeasts. Aging for 6 months in stainless steel tanks.
TASTING NOTES: It’s a low acidity, juicy Tempranillo with a leafy nose that provides freshness. There are notes of blueberries, blackcurrants and licorice. The palate has some grainy tannins and good balance. This is an easy, accessible Toro.
FOOD PAIRING: As great food wine, this wine comes into its own when served with beef, lamb or mature cheeses.
PRODUCER: Since its origin, the main purpose of Compañia de Vinos Telmo Rodriguez is the use only of native varieties from original areas. This philosophy contrasts with the boom of the implantation of foreign varieties, practically throughout the Spanish vineyard. Another of the initiatives to which the project wants to pay special attention, also from its origins, is the recovery of forgotten vineyards.
