GRAPE: Monastrell, Cabernet Sauvignon

APPELLATION: Alicante DO

VINIFICATION: Manual harvested in individual small plastic crates to protect the grapes is followed by a strict selection process at the bodega. Cool maceration prior to the fermentation. 17 days skin and seed contact, precedes a further 12 months ageing in new French and American oak barrels.

TASTING NOTES: Deep cherry colour, with purple tones. Red and black fruit aromas like plums and prunes, with hints of balsamic and aromatic herbs. With a silky and pleasant entry in the mouth, it has sweet and ripe tannins and well balanced acidity. A deliciously Mediterranean blend.

FOOD PAIRING: back spareribs with dark beer and honey, duck breast fillet with port and cherry sauce, filet mignon with goat cheese and port sauce, pasta with tomatoes and braised beef, Texas barbecue beef ribs with spiced rum sauce.

PRODUCER: Bodega Vinessens was founded by Andrés and Maria. They are a young married wine enthusiasts and pioneers of wine production in the Alicante area. The ‘Garage Bodega’ concept means they are able to adapt certain production techniques to each individual grape variety and style of wine. Such as, ‘micro-vinification’, in which they perform artisan macerations and fermentations in 500 liter barrels, with the utmost respect for the peculiar characteristics of each variety.
