APPELLATION: Ribera del Duero DO.
VINIFICATION: Made with 100% Tempranillo. Selection of the best old vines sourced from 4 plots and older than 50 years. Maceration for 8 to 10 days in stainless steel tanks at a controlled temperature of 25-28 ºCn. Aged 8 months in French oak barrels and 3 months in the bottle.
TASTING NOTES: “Let me count the ways in which this wine is black: in its spark of black rocky soil, in the darkness of its blueberry-skin tannins, in the layers of anise, blackberry and black cherry… It’s tight and as spicy as chorizo, which it would accompany well.” Joshua Greene, Wine&Spirits Mag. 2019
FOOD PAIRING: Perfect for red meats, roasts, fowl, firm-bodied fish such as salmon and pasta dishes.
